I think the moviemakers will be too busy with the battles and all the action sequences to find space for the epilogue and the money to pay all the actors needed for that short scene.
I imagine the final scene as being the Trio huddled around in Dumbledore's office, smiling at the Dumbledore's portrait, and Harry says that he's had enough trouble to last him a lifetime. That's a beautiful way to end the movies, in my opinion, esp. if the camera focuses on how much the characters have grown.
